Cheeseburger Omelette

  • 2 large eggs
  • ½ cup egg whites
  • 4oz lean ground beef or turkey
  • ¼ cup tomatoes, sliced or cubed
  • 2 tbsp reduced fat shredded cheddar cheese
  • Optional Toppings: ketchup, salt, pepper, pickles, chives, etc.


  1. Whisk together eggs and whites.
  2. Add egg mix to preheated medium heat skillet and cover.
  3. Cook until desired doneness. Usually this is about six minutes.
  4. Remove pan from heat.
  5. In a separate pan, cook ground beef. Season as desired.
  6. Top eggs with cooked beef and tomato, then fold in half.
  7. Top with cheese and heat through, covered, until cheese is melted.
  8. Finish with other toppings as desired.
